Wholemeal Fruit Slice
1 cup wholemeal self-raising flour
1/2 cup coconut
1/2 cup firmly packed brown sugar
1 cup chopped dried fruit of your choice
1 cup reduced fat milk
Grease a 19 x 29cm lamington pan. Line with enough baking paper to cover the ends of the pan.
Place all the ingredients in a large bowl. Stir well to combine thoroughly.
Pour the mixture into the prepared pan. Bake at 180°C for about 30 minutes or until a light golden colour. Cool in pan, then use the lining paper to remove slice from pan. Peel off paper and cut into squares.
Makes about 24 squares. Slice will keep for several days if stored in an air tight container.
Tip: instead of baking paper, get a Teflon pan and spray with oil, the slice will just slide right out and you don’t have to worry about peeling paper from the slice.
