Whole Orange Cake
1 large orange
185g butter, melted
3 eggs
1 cup caster sugar
1 1/2 cups self raising flour
Place the whole orange (yes WHOLE skin and all – take out pips if you want) in food processor and process until pureed. Add other ingredients and process until well mixed. Pour into greased lined 18 cm cake pan. Bake in a pre-heated moderate oven about 50 minutes or until cooked. Turn cake out on to rack to cool.
Ice when cold.
