White Mud Cake
250g butter/margarine
250g white chocolate
200 ml water
1+1/2 cups castor sugar
1+3/4 cups plain flour
1 cup SR flour
2 eggs lightly beaten
1 teaspoon vanilla
1/2 cup of sour cream or thick dollop cream (optional)
Icing:
125g butter/ margarine
125g white chocolate, melted
3/4 cup icing sugar
Or Ganache:
2/3 jar cream
200g white chocolate
Preheat oven to 150c.
Heat butter, sugar, chocolate, and water in saucepan and stir over a low heat until sugar has melted, and let cool to room temp. Sift both flours together and blend into chocolate mixture. Stir in eggs, vanilla and cream (optional). Pour into a deep 20 cm lined cake tin and cook for approx 1 hour or pour into 2 shallow tons and cook for approx 45 mins.
Icing: Cream together the butter and icing sugar then add melted chocolate.
Ganache: Heat cream and chocolate in a saucepan over a low heat and stir.
