White Chocolate and Macadamia Cookies
1/2 cup butter or margarine
1/2 cup caster sugar
1/2 cup brown sugar
1 small egg
1 teaspoon vanilla
1 1/2 cup self raising flour
1 cup white chocolate chips
1/2 cup roughly chopped macadamia nuts
In a large mixing bowl, cream butter/margarine.
Add the caster sugar and the brown sugar until it forms a creamy paste.
In a small bowl beat the egg and vanilla together and add to the cream mixture.
Stir all together well.In 2 separate batches, add the flour to the cream mixture and blend until smooth.
Fold in the chocolate chips and nuts
Drop the cookie dough from rounded teaspoonfuls onto cookie sheets lined with baking paper.
Bake at 190 for 8 minutes or until lightly browned around the edges.
Let them rest on the cookie sheet for about 10 minutes before removing to cool on a wire rack.
Because they are only baked for 8 minutes, they are slightly soft and doughy in the centre. If you prefer a crisper cookie, bake them for 10 minutes instead.
