Weekender Biscuit
125g butter
1/3 cup (75g) caster sugar
1 egg, lightly beaten
2/3 cup (110g) sultanas
1 cup (150g) S.R flour
1 1/2 cups (120g) crushed cornflakes
Beat butter and sugar in a small bowl with electric mixer until smooth, add egg, beat until combined. Stir in sultanas and sifted flour. Roll rounded teaspoons of mixture in cornflakes, place about 3 cm apart on greased oven trays, flatten slightly. Bake in a moderate oven about 20 minutes or until lightly browned. Makes about 35.
