Vegetable Pasties
This recipe’s suitable for babies aged 6-12 months and toddlers.
The pasties make ideal party food and can be frozen.
Pastry:
200 g butter
400 g plain flour
pinch baking powder
1 egg
1 tablespoon cold water
Filling:
1 large potato
1/2 small onion
1/2 carrot
1/2 parsnip
1 small piece pumpkin
# To make the pastry, rub butter into flour and baking powder until mixture resembles fine crumbs.
# Blend together egg and water. Add to flour mixture and gently mix through until just combined. Refrigerate for an hour.
# Roll pastry out to a thickness of 3/4 cm. Cut circles 10 cm in diameter.
# Peel and grate all vegetables. Place in a bowl and mix until well combined.
# Place spoonfuls of vegetable mixture on one edge of pastry and fold pastry over.
# Press edges firmly to seal and place on a baking tray.
# Bake in a moderate oven for 30 minutes or until pastry is golden.
Makes 2 dozen little pasties
As an alternative 125 g minced beef can be added to the vegetable mix for traditional Cornish pasties.
