Vegan Christmas Cake
4 cups (500 grams) mixed fruit
1 cup (125 grams) currants
1 and a 1/4 cup (1/4 litre) grape juice
3/4 cup sugar (preferably dark muscovado or molasses sugar, otherwise brown sugar)
1/2 cup oil
2 cups (250 gr) flour
1 cup (125 ml) soy or oat milk
2 Tbsp mixed spice
Put dried fruit in a bowl and pour over the grape juice, leave overnight, stir a couple of times. Mix together oil and sugar, then stir in flour, milk and spice. Fold in the soaked fruit and stir till evenly mixed in, but try not to over-mix.
Line a round cake tin with baking paper, pour in the mixture and bake for about 3 hours at 300F/ 150C/ gas mark 2, until a knife inserted in the middle comes out clean. Let cool on a rack before removing from tin.
