Tuscan Nut Biscuits
Makes: Approx 30
2 cups plain flour
1/4 tsp baking powder
pinch sail
2 eggs
grated rind 1 orange
1 cup caster sugar
120g whole unblanched almonds
80g pinenuts
1/2 cup white choc bits
100g dark melts, melted
1. Preheat oven to 190c. Grease and line a baking tray.
2. Sift flour, baking powder and salt into a large bowl. Make a well in the centre and add eggs, orange rind and sugar. Stir until ingredients are well combined. Add almonds, pinenuts and white choc bits, mix well.
3. Turn mixture onto a lightly floured surface and knead lightly until mixture comes together. Divide mixture in half and shape into a 18cm x 8cm loaf. Place onto prepared tray allowing room for spreading. Bake 30 minutes or until light golden in colour. Allow to cool.
4. Slice loaves using a serrated knife into 6mm thick slices. Place onto a lined baking tray and cook a further 30 minutes at 150c. Biscuits should be light golden colour and very crisp. When cold, spread base with melted dark melts.
