Tuna Fishcakes
Age: 9 Months +
425g can Tuna (in springwater)
1 finely grated carrot
1 finely grated potato
3 eggs, lightly beaten
1 cup breadcrumbs
Mix all the ingredients together well, and form into small patties. Heat a little oil until hot or use non-stick fry pan, and gently fry the fishcakes until golden brown on both sides (or about 5 mins each side to ensure potato is cooked). I have found these can be frozen, can be used as finger food, snack, lunch or with veggies for dinner. Alternatively for a quick snack use one small tin of tuna, one egg and 2 tbsp of breadcrumbs, mix and fry until golden brown.
