Tuna and Rice Slice
1 cup long grain rice
1 egg
30g melted butter
salt and pepper
440g tuna or salmon
45g butter
2 1/2 tsp curry powder
2 Tbsp plain flour
1 1/2 cup milk
1/2 cup mayonnaise
1 egg
2 tsp lemon juice
2 Tbsp chopped parsley
60g grated cheese
Cook rice.
Combine cooked rice with lightly beaten egg, melted butter, salt and pepper. Spread over base of casserole dish. Arrange drained tuna/salmon over rice.
Topping:
Melt butter in saucepan, add curry powder. Cook 1 min then stir in flour. Add milk and slowly bring to the boil, lower heat and simmer (stirring constantly) for 1 1/2 mins or until smooth and thickened. Add mayonnaise, egg, lemon juice and parsley. Combine well. Pour over rice and tuna. Sprinkle with cheese. Bake in a MOD oven for 30 mins or until lightly browned.
