Thai Chicken Meatballs
500g chicken breast mince
2 Tablespoons finely chopped fresh chives
2 Tablespoons finely chopped fresh parsley
1 level dessertspoon Thai seasoning
1 teaspoon finely chopped fresh ginger
1 egg
1/2 cup fresh white breadcrumbs
salt and pepper to taste
1 Tablespoon cornflour
2 Tablespoons peanut oil
1 teaspoon sesame oil
2 Tablespoons finely chopped fresh coriander
1. Combine all the ingredients except the cornflour and peanut and sesame oils. Form the mixture into mini meatballs.
2. Coat with the cornflour and fry in a small amount of peanut oil with a splash of sesame oil. Cook the meatballs for approximately 3 minutes on each side, until cooked through.
