Tangy Lemon Slice
Base:
1 cup plain flour
125g margarine
1/4 cup icing sugar
Topping:
2 tbsp lemon rind
1/2 cup lemon juice
3 eggs
1 cup caster sugar
1/2 cup plain flour
Base:
Cream sugar and margarine and add flour, press into tin and bake for 15 mins (180c).
Topping:
Mix lemon rind, juice, flour, eggs and sugar and mix well pour over base and cook 15-20 mins until set. Cool, sprinkle with icing sugar to serve.
