Strawberry Sorbet
3 cups strawberries, hulled and washed
1 cup water
1/2 cup castor sugar
2 tablespoons lemon juice
2 tablespoons Grand Marnier or Cointreau
2 egg whites
1/4 cup granulated sugar
1. Place water, sugar, lemon juice and Grand Marnier into electric blender. Add strawberries and blend on medium speed for 2 minutes.
2. Beat egg whites until soft peaks form, add extra sugar and beat until the sugar has all dissolved.
3. Pour strawberry mixture into a metal bowl, fold in egg whites. Cover and place in the freezer for 2 hours or until set around the edges, but soft in the middle (chilled). Beat with an electric beater and return to the freezer.
Serves 4-6
