Strawberry and Rhubarb Muffins
2 cups flour
1/2 cup sugar
3 teaspoons baking powder
1 large egg
1/3 cup oil
3/4 cup milk
1 teaspoon vanilla
1 cup mixed rhubarb and strawberries
Topping:
2 tablespoons white sugar
1/4 teaspoon cinnamon
In a large bowl mix the dry ingredients.
In a small bowl, beat egg.
Add to dry ingredients and mix.
Add remaining liquid ingredients to dry mixture. Mix, but do not over mix.
Add fruit.
Pour into Muffin Trays
Sprinkle 1/4 teaspoon topping on each muffin, if desired.
Bake for 20 to 30 minutes or until they are cooked.
