Strawberry and Coconut Cake
1 1/2 cups SR flour
1 cup caster sugar
1 1/3 cups dessicated coconut
3 eggs
125g butter, melted
2/3 cup buttermilk
1/2 tub strawberries (125g)
icing sugar to dust
1. Preheat oven 150c (fan off). Grease and line a large loaf tin.
2. In a bowl mix together flour, caster sugar and coconut. In another bowl mix eggs, butter and buttermilk together then add to dry ingredients and stir until combined. Place half in the tin. Put chopped strawberries over top keeping a border around the edge. Cover with the rest of mix.
3. Cook for approximately 1 and 1/2 hours to 2 hours or until golden.
4. Cool on a rack then when cold dust with icing sugar.
Tip: Other fruit can be used instead of strawberries.
