Steaks With Garlic Topping
Serves 4
4 boneless sirloin steaks (125g each), 1 cm thick, trimmed
2 teaspoons vegetable oil
For the Topping;
1 clove garlic, crushed
2 tablespoons ‘lite’ cream cheese
2 tablespoons low-fat reduced-salt cottage cheese
2 tablespoons snipped fresh chives or chopped spring onion/shallot tops
1/8 teaspoon freshly ground black pepper
1. To prepare the garlic topping, in a small bowl, combine the garlic, cream cheese, cottage cheese, chives and pepper. Using a fork, mix the ingredients until they are smooth. Set the topping aside.
3. Rinse steaks and pat dry with kitchen paper towels. In a large non-stick frying pan, heat oil over medium-high heat. Add steaks and cook, turning once, for 2 to 3 minutes per side for medium-rare, or 3 to 5 minutes per side for well done.
3. Using a fish/egg slice, place the steaks on individual dinner plates. Immediately top each one with about 1 teaspoon of the topping. The garlic topping will melt slightly. Serve steaks immediately.
Variation:
To grill steaks, preheat the grill. Prepare topping as directed in Step 1. Place steaks on grill rack in grill pan. Grill 10 cm from heat, turning once, for 3 to 4 minutes per side for medium-rare or longer for well done. Serve as directed in Step 3.
