South Indian Meat Curry
1 lb meat, cubed
5 red chillies, grind to smooth paste
5 dry chillies, chopped
2 tablespoons ginger, sliced
2 tablespoons garlic, sliced
1 cup tomatoes, chopped
1 cup onions, sliced
2 tbsp mutton masala (if possible)
1 teaspoon turmeric powder
1 cinnamon stick
5 cardamom
6 cloves
2 tablespoons coriander leaves, chopped
1 tablespoon oil
salt to taste
3/4 cup plain, non-fat yogurt
Marinate the meat in turmeric powder and salt.
On a low heat, heat the oil and add the garlic and ginger and sauté for a few minutes. Add the cup of the onions and sauté till golden brown. Then add the red chilli paste and mutton masala. Let the sauce cook for a while, stirring occasionally. When it gets too dry, add a little water. Add the meat and brown well. Put the tomatoes in and stir till dry. Add the dry chillies, and yogurt along with 1/2 a cup of water. Cook till done.
