Simple Rich Chocolate Mousse
180g (6.3 ounces) dark chocolate, broken into pieces
4 eggs, separated
1 tablespoon coffee or chocolate liqueur
300ml (10oz) thickened cream
Put the chocolate in a heatproof bowl over a saucepan of simmering water. Stir until it melts about 2 or 3 minutes.
Once the chocolate is melted, remove from the heat and allow to cool a little.
Mix the egg yolks and liqueur together gently and add to chocolate – stir until combined.
In a separate large bowl whip the cream until soft peaks form.
Gently fold the chocolate mixture into the cream – careful to fold gently.
In another bowl beat the egg whites until soft to medium peaks form.
Gently fold the egg whites into the chocolate mixture until combined.
Spoon into a large serving dish or 4 individual bowls.
Serve with cream, berries and chocolate sauce for a decadent end to any meal.
