Salmon Patties
Serves 4
500g potato, peeled, cooked and mashed
1 x 450g can pink salmon or tuna, drained and flaked
1 teaspoon lemon pepper
2 tablespoons grated parmesan cheese
1 egg lightly beaten
1 cup dry breadcrumbs
1 onion, finely chopped or sliced in rings
2 firm tomatoes, sliced
4 mozzarella cheese slices, cut in half
8 sprigs parsley
1. Combine potato, salmon, lemon pepper and parmesan cheese, mixing well. Mould into patties and dip in egg and breadcrumbs. Refrigerate 1 hour.
2. Heat a little oil in a non-stick frying pan, cook patties until golden brown on both sides.
3. Quickly cook onion in pan until soft, top each patty with onion, tomato, a slice of mozzarella cheese and a sprig of parsley. Allow cheese to melt or place under a hot grill to melt the cheese quickly.
