Rocky Road Cheesecake
1 Packet chocolate flavoured biscuits crushed
125g melted butter
3 teaspoons gelatine
1/4 cup cold water
2 packets (500g) Philly cream cheese
3/4 cup caster sugar
1/3 cup cocoa
1/2 teaspoon vanilla essence
2 cups miniature marshmallows
1/2 cup chopped walnuts
1/3 cup chopped cherries
1 cup whipping cream
Melt butter and combine with biscuits, press into a cheesecake tin. Bake at 180 degrees for 10 minutes.
Put water and gelatine in a small bowl and microwave for 30 seconds or until dissolved. Let sit.
In a large bowl combine cream cheese, sugar, cocoa and vanilla blend with a electric mixture, gradually add gelatine mixture and blend. Fold in whipped cream, marshmallows, nuts and cherries, pour onto crust. Chill until firm (overnight is best).
Decorate with whipped cream and grated chocolate.
