Rice Loaf
Age: 12 months +
2 cups cooked long grain rice
1 cup finely shredded spinach
2 cups ricotta or cottage cheese
1/2 cup tomato sauce
310g can sweetcorn kernels, drained
1 egg beaten (avoid egg whites if there is a family allergy)
1. Preheat the oven to 180. Combine all ingredients in a bowl and mix until evenly combined.
2. Spoon into a greased loaf tin.
3. Bake for 45 mins or until set.
