Raisin Zucchini Bread
2 1/2 cups wholemeal self-raising flour
1/2 tsp cinnamon
1/2 tsp salt
125gm butter, soft
2 eggs
3/4 cup raw sugar
1/2 cup yoghurt
1 cups chopped raisins
1 cup firmly packed zucchini
1/2 cup walnuts, chopped
1/4 cup sunflower seeds
extra sunflower seeds
Sift flour, cinnamon and salt. Cream butter and sugar, add eggs one at a time beating well. Fold in yoghurt, raisins, zucchini, walnuts, sunflower seeds and flour mix. Spoon into well greased medium loaf tin. Sprinkle with extra sunflower seeds. Bake 180c for about 70 minutes.
