Quick White Fudge
400g white chocolate
25og butter, chopped
3 cups icing sugar
1/3 cup cream
vanilla essence to taste
hundreds and thousands or silver cachous to decorate the top if desired
1. Place chopped chocolate, butter, sugar and cream into a saucepan. Stir over gentle heat until chocolate and butter have melted and mixture is smooth.
2. Simmer for 1 minute. Transfer to a bowl. Beat with and electric mixer for 3 minutes. Add vanilla.
3. Pour into a foil-lined 20cm square cake tin. Decorate top as desired.
Refrigerate until firm. Cut into pieces. Store in an airtight container in fridge.
