Quick Mix Cheese, Semi Dried Tomato and Olive Bread
2 cups plain flour
1 tablespoon caster sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 tsp pepper
80g chilled butter, cut into cubes
1 1/2 cups grated tasty cheese
3 green onion, thinly sliced
3/4 cup semi dried tomatoes, roughly chopped
1/2 cup pitted black olives, roughly chopped
1 cup milk
1 egg
extra 1/3 cup grated tasty cheese
1. Preheat oven to 200°C. Grease and line a 21cm x 10cm x 6 1/2 cm deep (base measurement) loaf pan with baking paper. Place flour, sugar, baking powder, salt, pepper and butter into a food processor. Process for 30 seconds. Add butter and process until mixture resembles fine breadcrumbs. Transfer to a large bowl. Add cheese, onion, tomatoes and olives
2. Whisk milk and egg in a jug until well combined. Make a well in the centre of the dry ingredients. Pour in milk mixture. Stir with a flat edged knife until a soft dough forms. Do not over-mix or bread will be tough.
3. Spoon into prepared baking pan. Sprinkle with extra cheese. Bake for 30 to 35 minutes or until the bread sounds hollow when tapped and is golden on top. Remove from the oven and stand on a wire rack in the tin for 5 minutes before turning out.
