Quick and Easy Quiche
Serves 5
4 eggs
2 teaspoon butter, melted
4 tablespoons self-raising flour
2/3 cup milk
3 slices lean ham, diced
1 medium onion, diced
1 cup grated cheese
1 medium tomato, sliced
1/2 x 440g can corn kernels
or
1 cup left-over Ratatouille, Peperonata, or Stir-Fry
# Combine the eggs, butter, flour and milk in an oven-proof dish, mix well.
# Add ham, onion, 1/2 the cheese, Stir-Fry (or corn), top with tomato and remaining cheese.
# Bake at 180 C for 30 minutes or until set.
# Serve with bread and salad vegetables.
