Potato Straws
4 large potatoes
Ice cold water
Oil for frying
1 tsp salt
1/2 teaspoon chilli powder
1/2 teaspoon ground cumin
1/2 teaspoon curry powder
Peel potatoes and cut into thin slices, then cut slices in matchstick strips. Soak in ice cold water, then drain and dry on paper towels. Heat oil til very hot and fry the potato straws a handful at a time, until they are crisp and golden. Lift out of oil and drain well on paper towels. Mix together salt and spices. When all straws are cooked throw into a bowl and season to taste with seasoned salt and toss.
