Pork with Plum Sauce
1/2 cup plum sauce
1/4 cup mild sweet chilli sauce
1 Tbsp grated ginger
2 cloves garlic, crushed
500g pork fillets, sliced
500g Hokkien noodles
1 Tbsp peanut oil
200g snow peas
1 medium carrot, sliced
1 medium red capsicum, sliced
200g button mushrooms, sliced
1/2 cup chicken stock
1. Combine sauces with ginger and garlic in jug. Combine half the sauce mixture with pork in bowl. Add noodles to large pan of boiling water, boil uncovered, until just tender; drain.
2. Heat oil in wok or large pan; stir-fry undrained pork in batches until brown and tender; stir-fry vegetables and noodles in same wok until just tender.
3. Return pork to wok with remaining sauce mixture and stock, stir-fry until mixture boils.
