Plum Pound Cake
500g butter
3 cups caster sugar
1/2 tablespoon baking powder
3 cups plain flour
1 cup of almond meal
1/2 cup of milk
6 eggs
1 dash of vanilla essence
6 plums
Mix together all the dry ingredients. Cream the butter and sugar. Add the eggs one at a time. Fold in the dry ingredients with the milk and vanilla essence. Grease and line a 28cm spring form cake tin. Stone plums and cut into quarters. Add half the cake mix to the bottom of the cake tin. Place half the plum segments evenly on top of the mix. Add the rest of the mix then follow with the remaining plums. Bake in a moderate oven, 180C, for 1 1/2 to 2 hours. Allow to cool and dust with icing-sugar.
