Plum Clafoutis
Serves 4
825g can dark plums in syrup, well drained
2 eggs
1/4 cup caster sugar
1 teaspoon vanilla essence
1/2 teaspoon finely grated orange rind
1/4 cup plain flour
1 tablespoon self-raising flour
1/2 teaspoon ground cinnamon
1/2 cup milk
icing sugar mixture for dusting
cinnamon sticks to decorate
Grease four shallow ovenproof dishes (3/4-cup capacity). Place on an oven tray. Halve plums; remove stones. Divide plums evenly among dishes. Whisk eggs, sugar, vanilla essence, rind, flours, cinnamon and milk in a large jug until smooth. Pour mixture over back of a dessertspoon into dishes. Cook in a moderate oven, 180C, for about 35 minutes, or until set. Serve warm, dusted with icing sugar mixture; decorate with cinnamon sticks.
