Pineapple Pork
2.3kg pork roast
1 onion, sliced
1 red capsicum, coarsely chopped
2 carrots, chopped
1/4 cup brown sugar
1 can crushed pineapple in natural juice, drained, or 1 fresh pineapple, sliced
1 tablespoon tomato paste
1 tablespoon soy sauce
6 slices fresh ginger, or 1 teaspoon ground ginger
Brown the pork in a frypan. Add to crock pot.
In the same pan you browned the roast in, add the remaining ingredients; stir together to blend and pour over the roast.
Cook on low for 8 hours.
