Pine Nut Butter Cookies
100g butter
100g caster sugar
50g Demerara sugar
1 large egg
250g self raising flour
100g pine nuts
Preheat oven gas 4/180C. Line 2 baking trays with baking paper, beat the butter and sugars together til creamy. Add the egg, then the flour and nuts; mix with your hands to make a dough – distributing the nuts evenly. Shape into 20 walnut size pieces and put them on the trays, flatten with a fork and bake for 12 minutes, leave to cool on the tray for 5 minutes then transfer to a wire rack when cool enough to handle.
