Pear Picnic Muffins
1 1/2 cups chopped pears
1 cup plain flour
2 cups self raising flour
1 tsp vanilla essence
1 tsp cinnamon
1 tsp bicarb soda
1/2 cup brown sugar
1/2 cup sugar
1 1/2 cups low fat milk
2 eggs, lightly beaten
3/4 cup oil
2 Tbsp castor sugar (extra)
2 tsp cinnamon (extra)
Grease muffin pans, sift dry ingredients. Stir sugars, combine milk, oil, eggs and essence. Stir roughly through the dry ingredients with diced pear. Do not over mix.
Spoon into muffin trays. Combine extra sugar and cinnamon. Spoon over muffins. Bake at 200°C for about 20 minutes. Makes about 12.
