Peanut Biscuits
Dairy and Gluten Free
1/2 cup non dairy margarine
1/4 cup brown sugar
1/4 cup crunchy peanut butter
2/3 cup brown or white rice flour
1 tsp mixed spice
pinch of sea salt
1/2 cup unsalted peanuts
1. Preheat oven to 180c. Using an electric beater, cream the margarine and sugar together until light and fluffy. Add the peanut butter and combine well.
2. Sift together rice flour, mixed spice and salt, stir in peanuts then add to the first mixture. Roll out into a thick sausage shape and slice into 1cm discs.
3. Place on lightly greased paper lined baking sheet and bake for 16 – 20 minutes. Remove and allow to cool on a cake rack.
