Orange Poppy Seed Cake
1/2 cup poppy seeds
1/2 cup yoghurt
200g butter
1 tbsp orange zest
1 cup castor sugar
3 eggs
1 1/2 cups SR flour
1/2 cup plain flour
1/2 cup nut meal
orange juice
1/2 cup shredded orange
Combine 1/2 cup poppy seeds with 1/2 cup yoghurt.
Set aside.
Beat 200g butter with 1 tbsp orange zest, 1 cup castor sugar till light and creamy.
Add 3 eggs, beating well.
Stir in the poppy seed mix then 1 1/2 cups SR flour, 1/2 cup plain flour, 1/2 cup nut meal and 200mls orange juice.
Bake in a an oven preheated to 180ºC in a 20cm square cake tin for about 50 minutes.
To finish off, pour a hot syrup of 1 cup orange juice, 1 1/2 cups water with 1/2 cup shredded orange rind over the cake.
