Orange, Lime and Almond Cake
2 navel Oranges
4 thin-skinned limes
Canola cooking spray
3 eggs
4 eggwhites
1 1/2 cups sugar
1 tsp baking power
225g Almond meal
Cream or Yoghurt to serve
Scrub oranges and limes. Place oranges in a large saucepan of boiling water and simmer for 1 hour. Add the limes and continue cooking of 1 more hour or until fruit is very soft!
Remove oranges and limes from water and allow to cool. Cut the fruit in half. Using a spoon, remove the seeds from fruit and discard.
Place remaining fruit including skins in blender and blend till smooth.
Preheat oven to 190c. Lightly spray a 22cm springform tin with canola spray and line with baking paper.
Beat eggs, eggwhites, sugar, and baking power until thick and pale. Fold in almond meal and the pureed orange and lime mixture.
Spoon the mix into prepared tin. Bake 1 hour or until skewer comes out clean. Place tin on wire track to cool.
Serve with Cream or yoghurt!
