Orange Cake
1 whole orange
3/4 cup plus 2 tablespoons butter – melted or softened
3 eggs
1 cup sugar
1 1/2 cups flour
3/4 teaspoon baking powder
Preheat oven to 180C.
Chop orange into quarters (leave skin on but remove any seeds) and put into food processor.
Add remaining ingredients and process until smooth.
Pour into a greased and floured ring tin and bake approximately 35 minutes or until a wooden skewer is pulled out clean from middle of cake.
Turn out of tin and cool on wire rack.
