Orange Cake
1 1/2 cups butter
1 3/4 cups sugar
4 eggs
1 tsp vanilla essence
1 tsp orange rind, finely grated
1 cup yoghurt or sour cream
1/2 cup orange juice
3 cups SR flour, sifted
Preheat oven to 180C. Combine yoghurt and sour cream together in a jug.
Beat butter and sugar until light and fluffy. Add eggs, one at a time, beating well between each addition. Stir in essence and rind.
Fold in flour and wet ingredients, starting and ending with wet ingredients. Spoon into greased and floured flouted tub pan and bake 50-60 mins at 180C.
Glaze
1/2 cup orange juice
3 tablespoons sugar
Bring to the boil; then simmer for 3 minutes. Pour hot glaze over cake. Let stand 10 mins before slicing.
