Orange and Balsamic-Glazed Broccolini
Serves 4 as a side.
1 bunch broccolini, stems removed
1 tablespoon olive oil
2 cloves garlic, peeled and sliced
1 tablespoon brown sugar
2 tablespoons balsamic vinegar
1/2 cup orange juice
1 zucchini, cut into batons
1/4 cup lightly toasted pecans, roughly chopped
1. Place the broccolini florets in a large, heatproof bowl. Pour in enough boiling water to cover and soak for 2 minutes. Drain and set aside.
2. Heat the olive oil in a frying pan and cook the garlic for 1 minute. Add the brown sugar and stir-fry for 1 minute. Add the balsamic vinegar and orange juice, and bring to the boil for 4-5 minutes or until thick and syrupy.
3. Add the broccolini and the zucchini batons, tossing for 2-3 minutes until well coated with the sauce. Scatter over the pecans and serve.
