Orange and Almond Cake

Makes a 20cm-square cake
1 1/2 cups plain flour, sifted
2 tsp baking powder, sifted
100g ground almonds
3/4 cup caster sugar
3 eggs, lightly beaten
1/2 cup olive oil
Finely grated rind and juice of 2 oranges
100g whole blanched almonds
1. Preheat oven to moderate (180C). Brush a deep 20cm-square cake tin with melted butter or spray with cooking spray and line the base with baking paper. Put the flour, baking powder, almonds and sugar into the bowl of a large food processor. Process for 30 seconds or until mixture is just combined.
2. Add eggs, olive oil, orange rind and juice to processor and process until mixture is just combined and smooth. Spoon into prepared cake tin and smooth surface. Decorate with almonds. Bake for 55-60 minutes or until cake is well risen and firm and a skewer inserted in the centre comes out clean. Remove from oven and stand on a wire rack for 10 minutes before turning out.
