Mixed Berry Friands
Makes 12
11/2 cups (240g) icing sugar mixture
1 cup (100g) dry breadcrumbs
1/2 cup (75g) plain flour
90g low-fat butter or margarine, melted
100ml skim milk
6 eggwhites
1 cup (135g) frozen mixed berries (see note)
1. Preheat oven to 180ºC. Lightly grease a 12-hole friand pan (see tip).
2. Combine icing sugar, breadcrumbs and flour in a bowl. Add butter and milk, and stir gently until combined.
3. In a clean bowl and using an electric mixer, lightly beat eggwhites until frothy, then fold into breadcrumb mixture. Gently fold in berries.
4. Divide mixture evenly into prepared pan. Bake for 25-30 minutes, until a skewer inserted into centre of friands comes out clean. Stand in pan for 5 minutes before turning out onto a wire rack to cool completely.
Note:
# Use berries while still frozen. Fresh berries can be used, if available.
# Two 6-hole friand pans can be used or if you do not have a friand pan, use a muffin or mini-loaf pan.
# This recipe does not require eggwhites to form a foam, just whisk until lightly fluffy.
# For a subtle flavour boost, add a few drops of almond essence to mixture when adding milk.
