Mini Thai Chicken Cakes
2 bunches of coriander
1 kg chicken mince
2 cloves garlic
4 Tbsp of oyster sauce
1 Tbsp of fish sauce
2 Tbsp sweet chilli sauce
1 Tbsp grated ginger
1 Tbsp lemon grass
600ml coconut cream
salt and pepper
Whiz all ingredients in blender. Put into mini muffin tins. Bake for 10-15 mins at 200c.
