Mini Meatloaves with Grated Vegetables
300 g (10 oz) lean premium beef mince
1/2 small onion, grated
1/2 small carrot, grated
1/2 cup (30 g / 1 oz) fresh white or wholemeal breadcrumbs
2 tablespoons tomato sauce
1 tablespoon chopped fresh parsley
1. Preheat oven to 200°C (400°F / Gas 6). Lightly grease a 6 x 1/2 cup (125 ml / 4 fl oz) capacity muffin pan.
2. Put the beef into a bowl, add the onion, carrot, breadcrumbs, half the tomato sauce and the parsley and mix well with your hands to combine.
3. Divide the mixture among the muffin holes. Brush the tops with the remaining tomato sauce, then bake for 20 minutes or until cooked through. Serve with a salad or vegetables.
