Microwave Chocolate Pots
115g brown sugar
100g mascarpone
25g Dutch cocoa
1 tsp vanilla essence
40g self-raising flour
2 eggs
thick cream
icing sugar
Combine sugar, mascarpone, Dutch cocoa, vanilla, self-raising flour and eggs with a hand mixer.
Divide the mixture between 4 ramekins and loosely cover with plastic wrap. Then cook, 2 at a time, in the microwave on high for 1 min 15 secs. Allow to stand for 2 mins, before removing the plastic. Repeat the process with remaining ramekins.
Serve with a dollop of cream and a sprinkling of icing sugar on top.
