Melting Moments
125g butter
2 tbsp icing sugar, sifted
1/2 cup cornflour, sifted
1/2 cup plain flour, sifted
125g dark chocolate, chopped
15g solid white vegetable shortening
Orange Cream:
30g butter
3 tbsp icing sugar, sifted
1 tsp grated orange rind
1 tsp Cointreau
1 tsp orange juice
Cream the butter and sifted icing sugar together until light and fluffy. Add sifted flours; mix well. Put mixture into piping bag fitted with fluted tube. Pipe small stars onto lightly greased oven trays, bake in a 180 C oven for about 10 – 12 minutes until pale golden brown. Cool on trays. Melt chopped chocolate and vegetable shortening over hot water; remove from heat. Dip half of each biscuit into chocolate mixture, Place on foil to set. When chocolate has set, join biscuits with orange cream.
Orange Cream: Beat butter til smooth, gradually add sifted icing sugar, beat til mixture is light and creamy. Beat in orange rind, Cointreau, and orange juice.
