Marshmallow Cones
2 tablespoons gelatine
1/2 cup water
1/2 cup raspberry cordial extra
1/2 cup water
2 cups caster sugar
2 teaspoons lemon juice
red food colouring
18 multi-coloured ice-cream cups
assorted mixed lollies
1/2 cup hundreds and thousands
1. Sprinkle gelatine over water in a bowl; stand for 5 minutes.
2. Combine cordial, extra water, sugar and gelatine mixture in a large pan; stir over low heat until sugar is dissolved. Bring to boil; boil gently, uncovered, without stirring for 6 minutes. Stir in lemon juice; cool to room temperature.
3. Transfer mixture to a large bowl, beat with an electric mixer until very thick and creamy; beat in food colouring.
4. Stand ice-cream cups on a large tray; half fill each with lollies.
5. Spoon marshmallow mixture into a large piping bag; fitted with large star nozzle. Pipe mixture into cups; sprinkle with hundreds and thousands. Refrigerate cones until firm.
