Mars Bar Brownie
Makes 20
80g margarine
2 44.5g Mars bars, roughly chopped
150g (1 cup) self-raising flour
25g (1/4 cup) cocoa
25g (1/4 cup) pecans, chopped
200g (1 cup) firmly packed brown sugar
220g (1 cup) caster sugar
1 egg, lightly beaten
Preheat oven to 180C. Spray a 20cm square cake pan with cooking oil spray. Line base and sides with baking paper.
Melt margarine in a small saucepan over medium heat, add Mars Lite, stir over heat until melted.
Sift flour and cocoa into a large bowl, stir in pecans, brown and caster sugars. Add margarine mixture and egg, stir until just combined. Spread into prepared pan, bake for about 30 minutes. To test, insert a skewer under the crust. It should come out with firm and fudgey mixture attached. Remove from pan, cool, cut into bars.
