Mango Bread
2 cups flour
2 tsp baking soda
2 tsp cinnamon
3/4 cup cooking oil
1/2 tsp salt
1 1/4 cups sugar
1 tsp vanilla
3 eggs
2 cups diced mangos
1/4 cup walnuts
1/2 cup coconut, shredded
Sift flour, salt, soda, and cinnamon together. Make a well in dry ingredients and add eggs, oil, vanilla, sugar, nuts, coconut and mangoes; mix well, put into 2 greased 8 x 4 x2 loaf pans. Let stand 20 minutes before baking at 350’F for one hour.
Note: This makes 2 loaves.
