Mango and Berry Shake
Serves: 4
1 large mango (about 500g), peeled, stoned and cut into wedges
2 cups rockmelon chunks
300g frozen unsweetened raspberries
1 1/2 cups (375ml) soy milk
2 Tablespoons fresh lime juice
2 Tablespoons honey
1 teaspoon vanilla extract
1 teaspoon ground ginger
Working in 2 batches; combine the mango, rock-melon, raspberries, soy milk, lime juice, honey, vanilla and ginger in a blender. Blend until smooth.
