Low Fat Vanilla Slice
18 Lattice biscuits
750ml low fat milk
2 tablespoons honey
3 tablespoons custard powder
1 egg yolk
4 teaspoons gelatine
65ml boiling water
4 tablespoons icing sugar
1 tablespoon lite sour cream
1 passionfruit
Line a container with tin foil. Place 9 biscuits in the container. Heat the milk, honey and custard power, stirring constantly until thickened. Remove from heat and beat egg yolk through.
Dissolve gelatine in boiling water and add to custard mixture. Allow to cool but not set
Pour the custard over the biscuits, then layer the remaining 9 biscuits on top. Place in fridge.
Mix the icing sugar, sour cream and passionfruit pulp. Spread over the top of the biscuits and serve.
