Lime Roast Chicken with Rice Seasoning
This recipe is free from gluten, dairy products and eggs. The rice seasoning can be doubled for a small turkey. Rice seasoning can be made a day ahead; season chicken just before baking.
1.6kg chicken
1 tablespoon lime juice
20g dairy-free margarine, melted
Rice Seasoning:
1/3 cup (65g) white long-grain rice
20g dairy-free margarine
1 medium (150g) onion, finely chopped
2 cloves garlic, crushed
1 teaspoon grated lime rind
1 1/2 tablespoons lime juice
1/4 cup (35g) slivered almonds, toasted
2 tablespoons chopped fresh coriander leaves
Fill chicken with rice seasoning, secure opening with toothpicks. Tuck wings under body, tie legs together with string. Place chicken on wire rack in baking dish. Brush a little of the combined juice and margarine over chicken. Bake, uncovered, in moderate oven about 1 1/2, hours or until tender, brushing chicken occasionally with lime mixture during cooking.
Rice Seasoning: Add rice to pan of boiling water, boil, uncovered, until just tender. Drain, rinse rice under cold water, drain well. Heat margarine in small pan, add onion and garlic, cook, stirring, until onion is soft; cool. Combine onion mixture with rice and remaining ingredients in bowl.
Serves 6.
Not suitable to freeze.
